can CFRP laminates deform like metals when subjected to for example internal pressure resulting in shape change then, if so is it also influenced by the type of ply stacking

Are you interested in particular type of structure (like pressure vessels) or just CFRP in general ? I think that you should start by studying scientific articles on this topic. There are also several good books about composites, their mechanics and modeling (including modeling in Abaqus - E.J. Barbero’s book).

The answers are yes and yes. However most composites are have linear stress-strain response to failure; no plasticity as with most metals.

so meaning to say the CFRP can stretch the same way as steel? ain't they brittle ofcoz with nonlinearity unlike metals which tend to break than stretch

CFRP materials are linear to failure, at least for fiber dominated layups. No yielding or plasticity.
